I am often taking notes quickly into one note and don't have time to be
switching pen colours all the time. Why don't you add the feature to change
your digital ink's colour later so I can better organize my notes

Have you tried using the Pens toolbar? (View / Toolbars / Pens )

Then it's just one click to change the colour - can't get much faster
than that.

Yeah, i use the pens toolbar everyday, but i'm just saying that often, for
me, it'd be very handy to change the ink's colour after i have written so I
can better organize my notes, i do a lot with colour-coding and that would
make things so much better and powerful
